Wet Ingredients

  • 1/2 cup cold unsalted butter, cubed Keep it cold for a flaky texture.
  • 1 cup fresh blueberries Handle gently to prevent breaking.
  • 2/3 cup cold heavy cream Measure cold for the best results.
  • 1 large egg Should be at room temperature for better incorporation.
  • 1 tsp pure vanilla extract Use pure extract for the best flavor.

Glaze Ingredients

  • 1 cup powdered sugar, sifted Sifting is essential for a smooth glaze.
  • 2-3 tbsp fresh lemon juice Use freshly squeezed juice for the best flavor.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt, and lemon zest.
  • Add the cold, cubed butter to the dry mixture and blend until it resembles coarse crumbs.
  • In a separate bowl, whisk together the cold cream, egg, and vanilla extract. Pour into the dry mixture and stir until just combined.
  • Gently fold in the fresh blueberries.
  • Turn the dough onto a lightly floured surface and knead it gently a couple of times. Pat it into a circle about 1-inch thick and cut into triangles.
  • Place the scones on a parchment-lined baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 20-25 minutes, or until golden brown on top.

Glazing

  • Make the glaze by mixing powdered sugar and lemon juice together until smooth.
  • Drizzle the glaze over warm scones before serving.

Notes

For added flavor, consider adding poppy seeds. Customize by using different fruits or flavors. Scones are best served slightly warm.
