  • 1 pound boneless, skinless chicken breasts Fresh chicken recommended
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1 lemon juice and zest Use freshly squeezed juice
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • for garnish Fresh parsley Chopped

Preparation

  • Season the chicken breasts with salt, pepper, and oregano.

Cooking

  • Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and cook until browned, about 5-7 minutes per side. Remove the chicken and set aside.
  • In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
  • Add the orzo to the skillet, stirring to coat it in the oil and garlic. Pour in the chicken broth and bring to a boil.
  • Return the chicken to the skillet, cover, and reduce heat to simmer. Cook for about 10 minutes, until the orzo absorbs the broth and the chicken is fully cooked.
  • Stir in the lemon juice and zest for brightness.
  • Remove from heat, garnish with fresh parsley, and enjoy!

Notes

Enhance flavor by marinating the chicken in lemon juice for at least 30 minutes before cooking. Customize with sautéed spinach, cherry tomatoes, or bell peppers. Serve with warm crusty bread to soak up the delicious broth.
