  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.25 teaspoons baking soda
  • 0.25 teaspoons salt
  • 0.25 cups poppy seeds

Wet Ingredients

  • 0.5 cups unsalted butter, melted
  • 2 large eggs
  • 0.5 cups milk
  • 0.25 cups fresh lemon juice
  • 1 zest lemon

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a muffin tin with muffin liners.
  • In a large bowl, mix the flour, sugar, baking powder, baking soda, salt, and poppy seeds together.
  • In another bowl, whisk together the melted butter, eggs, milk, lemon juice, and lemon zest.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.

Baking

  • Fill each muffin liner about 2/3 full with batter.
  • Bake for 18-20 minutes, or until a toothpick comes out clean.
  • Allow the muffins to cool in the tin for a few minutes, then transfer to a wire rack.

Notes

Dust the muffins with powdered sugar for presentation. Serve warm for the best experience.
