Ingredients

Seasoning/Spice Blend

  • 1 tbsp Garlic Powder
  • 1 tbsp Ground Cumin

Liquids/Dairy

  • 1 cup Shredded Cheese Use cheddar or a Mexican cheese blend for creaminess.
  • 1/2 cup Sour Cream or Greek Yogurt Choose based on preference; Greek yogurt is lighter.

Aromatics & Vegetables

  • 2 stalks Green Onions Slice just before serving for freshness.
  • 1/4 cup Cilantro Adjust according to preference.

Optional Finishing Ingredients

  • 1 medium Tomato Dice for topping.
  • 1/2 cup Corn Optional topping for sweetness.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Coat diced potatoes in olive oil, seasoning with chili powder, paprika, garlic powder, ground cumin, salt, and pepper.
  • Spread the potatoes on a baking sheet.

Cooking

  • Bake the potatoes for 25-30 minutes until crispy and golden, flipping halfway through.
  • While the potatoes are baking, heat a skillet over medium heat.
  • Add ground beef or black beans and cook until browned or heated through, about 5-7 minutes.
  • Stir in taco seasoning and simmer for a couple of minutes.
  • Remove the potatoes from the oven and layer the cooked protein on top. Sprinkle shredded cheese generously over the mixture.
  • Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Assembly

  • Scoop out portions onto serving plates.
  • Top with sour cream or Greek yogurt, salsa, sliced green onions, and chopped cilantro.

  • Customize your bowls by adding diced tomatoes, corn, jalapeños, or olives.
