Beans and Corn

  • 1 cup black beans, drained and rinsed Canned for convenience.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, toss the diced potatoes with olive oil, chili powder, cumin, salt, and pepper.

Cooking

  • Spread the seasoned potatoes on a baking sheet in a single layer and bake for 25 minutes.
  • While the potatoes bake, heat black beans and corn in a skillet over medium heat for about 5 minutes.

Assembly

  • Dice the tomatoes and avocado, and chop cilantro.
  • Once the potatoes are done, layer them in bowls with warm beans and corn.
  • Top with diced tomatoes, avocado, and a dollop of sour cream.
