  • 2 lbs potatoes Washed and peeled, cut into bite-sized pieces
  • 1 lb ground beef Cooked until browned
  • 1/2 cup frozen corn
  • 1 tbsp chili powder Or to taste
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 1/2 cup water For simmering

Toppings

  • 1/2 cup shredded cheddar cheese For serving
  • 1/2 cup guacamole For serving
  • Pico de gallo For serving
  • Sour cream For serving

Instructions
 

Preparation

  • Wash and peel the potatoes, then cut them into bite-sized pieces.
  • Boil the potatoes in a large pot until tender, about 20 minutes; drain and set aside.

Cooking

  • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat if necessary.
  • Add the frozen corn, chili powder, salt, garlic powder, pepper, and water to the skillet. Stir and simmer for 10 minutes.

Combining

  • In a large bowl, combine the cooked potatoes with the beef mixture. Mix well.

Serving

  • Serve immediately, topped with cheddar cheese, guacamole, pico de gallo, and sour cream.
