Ingredients
  

Potatoes

  • 4 large large russet potatoes Scrub clean and pierce with a fork before baking.

Steak

  • 2 pounds steak (such as NY strip, ribeye, sirloin, or tenderloin) Trim excess fat, season, and let rest before slicing.

Oils and Butter

  • 4 tablespoons olive oil For coating potatoes.
  • 4 tablespoons avocado oil Divided for cooking steak and making sauce.
  • 6 tablespoons softened butter For making sauce.

Seasonings

  • 1.5 tablespoons sea salt
  • 2 teaspoons kosher salt For seasoning steak.

Cream Sauce Ingredients

  • 1.5 cups heavy cream Create a rich sauce.
  • 2/3 cup grated parmesan Add to the cream sauce.
  • 2 tablespoons minced garlic Saute in butter for sauce.
  • 2 tablespoons minced fresh parsley For garnish and flavor.
  • 2 wedges lemon (juiced) Add for brightness.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Scrub the russet potatoes thoroughly and pierce them in several places with a fork to prevent bursting.
  • Coat them in olive oil and sprinkle generously with sea salt.
  • Bake for 45-50 minutes, until they are tender when pierced with a fork.

Cooking the Steak

  • While the potatoes bake, heat 2 tablespoons of avocado oil in a large skillet over medium-high heat.
  • Season the steak with kosher salt and Cajun seasoning.
  • Cook the steak for about 4-6 minutes on each side for medium-rare, adjusting the time if you prefer your steak more done.
  • Remove from the skillet and let it rest.

Making the Savory Cream Sauce

  • In the same skillet, add 4 tablespoons of butter and minced garlic over medium heat.
  • Sauté until fragrant, about 1-2 minutes.
  • Slowly pour in the heavy cream while stirring, then add the parmesan cheese.
  • Continue to cook until the sauce thickens, about 3-5 minutes.

Assembly

  • Once rested, slice the steak into bite-sized pieces.
  • Carefully slice open the baked potatoes, fluffing the insides with a fork.
  • Stuff each potato with sliced steak, then drizzle generously with the savory cream sauce.

Finishing Touches

  • Sprinkle minced parsley, fresh lemon juice, red pepper flakes, and cracked pepper over the loaded potatoes.

Notes

For an extra flavor boost, add some grated cheese on top before serving. Feel free to customize the toppings to include jalapeños or caramelized onions. For serving, try using a dollop of sour cream alongside the cream sauce.
