For the Filling

  • 2 cups cooked chicken breast, shredded or rotisserie
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 cloves garlic, minced
  • 1/4 cup cream cheese, softened
  • 1 tablespoon olive oil
  • 4 large low-carb tortillas or wraps
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper (to taste)
  • 1 handful baby spinach (optional)

Preparation

  • Start by shredding the cooked chicken if needed. Preheat your oven to 375°F (190°C).

Make the Filling

  • In a bowl, combine shredded chicken, mozzarella cheese, cheddar cheese, minced garlic, softened cream cheese, olive oil, salt, and pepper. Stir well until everything is mixed.

Assemble the Wraps

  • Lay out a tortilla and place some of the chicken mixture in the center. Add chopped parsley and spinach if desired. Fold the sides over the filling, then roll tightly.

Bake the Wraps

  • Place the wraps seam-side down on a baking sheet. Bake for 15-20 minutes or until the tortillas are golden and crispy.

  • Let the wraps cool slightly before slicing. Serve warm on a platter with a sprinkle of parsley for garnish.
