Dressing

Preparation

  • Cook the Lentils: Start by bringing 2 cups of water to a boil in a medium pot. Add the rinsed lentils and cook for 15-20 minutes or until tender but still firm. Drain any excess water and set aside to cool.
  • Prepare the Vegetables: While the lentils are cooking, dice the cucumber and bell pepper. Halve the cherry tomatoes and finely chop the red onion.

Assembly

  • Make the Dressing: In a small bowl, whisk together 3 tablespoons of olive oil and 2 tablespoons of fresh lemon juice. Season with salt and pepper.
  • Combine the Ingredients: In a large bowl, combine the cooled lentils with the prepared vegetables and chopped parsley. Drizzle with the dressing and toss gently until everything is well mixed.
  • Adjust Seasoning: Taste the salad and adjust the seasoning with more salt, pepper, or lemon juice as needed.
  • Let it Rest: Let the salad sit for about 10 minutes to allow the flavors to meld together.

Notes
