Ingredients
  

Main Ingredients

  • 2.5 lbs bone-in chicken thighs or drumsticks
  • 1 tsp salt plus more to taste
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp curry powder
  • 1 tsp thyme
  • 1 onion chopped
  • 1/4 cup vegetable oil
  • 4 large Roma tomatoes
  • 1 small red onion
  • 2 pcs scotch bonnet peppers or 1 for less heat
  • 2 tbsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • 1 cube bouillon (Maggi or Knorr)

Instructions
 

Preparation

  • Season the chicken by combining salt, black pepper, paprika, curry powder, and thyme in a bowl. Rub it all over the chicken pieces.

Cooking

  • Heat the vegetable oil in a large pot over medium heat. Add the chicken and brown on all sides, about 5-7 minutes.
  • Remove the chicken and set aside. In the same pot, add the chopped onion and sauté until soft.
  • Add the Roma tomatoes, red bell pepper, small red onion, and scotch bonnet peppers. Cook until the tomatoes break down and form a sauce.
  • Stir in the tomato paste, garlic powder, ginger powder, and the bouillon cube. Mix well.
  • Return the chicken to the pot and add enough water to cover. Bring to a boil, then reduce heat to low and simmer for about 30 minutes.
  • Taste and adjust seasoning with salt as needed. Cook until the chicken is tender and cooked through.

Notes

Enhance flavor by adding lemon or lime juice before serving. Customize heat by adjusting the number of scotch bonnet peppers.
