Ingredients
  

Main Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)

Spices

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions
 

Cooking

  • In a large skillet, heat a little oil over medium heat. Add the chicken and cook until browned, about 5-7 minutes.
  • In a bowl, mix BBQ sauce and honey. Once the chicken is browned, pour the mixture over it and stir to coat.
  • Add the rice to the skillet, pouring in the chicken broth. Stir in the garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Bring to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 20 minutes.
  • In the last 5 minutes of cooking, mix in the vegetables. Let them steam until tender.
  • Remove from heat, fluff with a fork, and serve warm.

Notes

For a spicy kick, add chili flakes. Customize with your favorite veggies or BBQ sauce.
