  • 2 cups Baby Potatoes Swap for sweet potatoes for an interesting flavor shift.
  • 2 tablespoons Olive Oil Any light cooking oil can work.
  • 1/4 cup Fresh Parsley or Green Onions Consider both for a colorful garnish.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine sliced kielbasa, chopped bell peppers, baby carrots, and baby potatoes.
  • In a small bowl, whisk together honey, minced garlic, soy sauce, and olive oil.
  • Pour the mixture over the sausage and veggies, tossing until evenly coated.
  • Spread the mixture on a large baking sheet in a single layer.

Cooking

  • Bake for 20 minutes, stirring halfway through, until veggies are tender and kielbasa is browned.
  • Remove from oven and garnish with fresh parsley or green onions before serving.
