  • 1 cup orzo pasta No need to pre-cook; add directly to the pan.
  • 2 tablespoons olive oil For sautéing the chicken.
  • 1 each onion (diced) Sauté until soft and translucent.
  • 3 cloves garlic (minced) Use fresh garlic for best flavor.
  • 4 cups chicken broth Low-sodium recommended.
  • 1 each lemon (zested and juiced) Adds flavor and freshness.

  • Start by heating the olive oil in a large skillet over medium heat.
  • Add the chicken pieces and cook for about 5-7 minutes, or until browned and cooked through.
  • Next, stir in the diced onion and minced garlic. Cook for another 2-3 minutes, or until the onion is translucent.
  • Add the orzo pasta to the skillet and stir well to combine all the flavors.
  • Pour in the chicken broth, lemon juice, and lemon zest. Bring the mixture to a gentle boil, ensuring the orzo is submerged.
  • Reduce the heat to low and cover. Let it simmer for about 15 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  • Once done, season with salt and pepper to taste. Remove from heat and garnish with fresh parsley and a sprinkle of lemon zest before serving.

Notes

Add spinach or cherry tomatoes for extra nutrition; serve with lemon wedges for more flavor.
