Ingredients
  

Main Protein

  • 1 pound boneless skinless chicken thighs Trim off any excess fat and slice into sandwich-sized pieces.

Liquids/Dairy

  • 1 cup dill pickle juice Combine with buttermilk for marinating.
  • 1 cup buttermilk Yogurt can be used as an alternative.

Seasoning/Spice Blend

  • 1 cup all-purpose flour Gluten-free flour can be used as an alternative.
  • 2 tablespoons cornstarch Helps create a crispy coating.

Aromatics & Vegetables

  • 4 leaves green leaf lettuce Wash, dry, and slice for sandwich.
  • 2 cups coleslaw mix Mix with mayonnaise and seasonings.
  • thick-cut units dill pickles Adds a tangy crunch to the sandwich.

Optional Finishing Ingredients

  • 4 units brioche buns Toast lightly before assembling.
  • to taste units mayonnaise Spread on buns.

Instructions
 

Preparation

  • Start by combining the pickle juice and buttermilk in a bowl. Add the chicken thighs, ensuring they are fully submerged. Marinate for 1 to 2 hours in the refrigerator.
  • While the chicken is marinating, whisk together the flour, cornstarch, Cajun seasoning, garlic powder, and paprika in a shallow dish.
  • In a deep skillet, heat enough oil for frying over medium-high heat (about 350°F).

Cooking

  • Remove the chicken from the marinade, allowing excess liquid to drip off. Dredge each piece in the flour mixture, pressing lightly to ensure it sticks.
  • Carefully place the coated chicken in the hot oil. Fry for about 5-6 minutes on each side until golden brown and cooked through. Drain on paper towels.
  • In a large bowl, mix the coleslaw mix with mayonnaise, apple cider vinegar, sugar, salt, and pepper. Toss until fully coated.

Assembly

  • Spread mayonnaise on the toasted brioche buns. Layer on the lettuce, fried chicken, coleslaw, and dill pickles. Top with the other half of the bun.
  • Serve hot and enjoy!

Notes

Enhance flavor with a splash of hot sauce in the coleslaw. Customize with your favorite toppings.
