Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix melted butter, sugar, and 1 ¼ cup flour until combined.
  • Press the mixture into the bottom of a greased baking dish to form the crust.
  • In another bowl, whisk eggs and brown sugar together until smooth.
  • Stir in the drained crushed pineapple and chopped pecans.
  • Add 2 tablespoons of flour, baking powder, and salt to the pineapple mixture.
  • Pour the filling over the prepared crust and spread evenly.

Baking

  • Bake for 30-40 minutes, or until the filling is set and slightly golden.
  • Allow the bars to cool completely before applying icing.

Icing

  • For the icing, beat softened butter, powdered sugar, and pineapple juice until smooth.
  • Spread over the cooled bars.

Notes
