  • 2 lbs potatoes
  • 1/4 cup olive oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 1/2 cup chopped fresh herbs (parsley, chives, or dill)
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cherry tomatoes, halved (optional) Optional ingredient

Preparation

  • Start by washing the potatoes and placing them in a large pot. Cover with cold water and add a pinch of salt.
  • Bring the water to a boil and cook the potatoes until tender, about 15-20 minutes. Drain and let them cool slightly.
  • While potatoes cool, prepare the dressing by whisking together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper in a small bowl.
  • Once the potatoes are cool enough to handle, chop them into bite-sized pieces and place them in a mixing bowl.
  • Add the chopped herbs, red onion, and cherry tomatoes to the potatoes.
  • Pour the dressing over the potato mixture and gently toss to combine everything evenly.
  • Taste and adjust seasoning if needed, adding more salt or pepper as desired.
  • Serve at room temperature or chill in the refrigerator for 30 minutes before serving.

Notes

Add a squeeze of lemon juice for a zesty kick. Customize with your favorite veggies, like bell peppers or cucumber. Serve on a bed of greens for an elegant touch.
