Main Ingredients

  • 2 large sweet potatoes Choose firm, unblemished sweet potatoes.
  • 1 lb ground turkey Can be substituted with beef, chicken, or a vegetarian option.
  • 1 can black beans, drained and rinsed Can use canned or cooked from scratch.
  • 1 cup shredded cheese (cheddar or your choice) Feel free to mix cheeses.
  • 1 tablespoon olive oil Used for cooking turkey.
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the sweet potatoes thoroughly and poke holes in them with a fork.
  • Place the sweet potatoes on a baking sheet and bake for about 45 minutes, or until tender.

Cooking

  • In a skillet, heat olive oil over medium heat. Add ground turkey and cook until browned.
  • Stir in the cumin, paprika, salt, and pepper, and cook for another 5 minutes.
  • Add the black beans to the skillet and mix well.
  • Once the sweet potatoes are done, remove them from the oven and slice them in half.
  • Scoop out a little of the flesh to create a boat shape, leaving the skin intact.
  • Fill each sweet potato half with the turkey and bean mixture.
  • Top generously with shredded cheese and return to the oven for an additional 5-10 minutes, until the cheese is melted.
  • Serve with your favorite toppings.

Notes

For flavor enhancement, try adding chopped garlic or onions to the turkey mixture. Customize by switching out the ground turkey for beef, chicken, or a vegetarian option. Serve with a side of salsa for an extra kick.
