Main Ingredients

  • 1.25 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 cups Yukon Gold potatoes, peeled and cut into 1/2-inch cubes
  • 1 small zucchini, cut into bite-size pieces
  • 1/2 red bell pepper, diced
  • 1/2 yellow bell pepper, diced
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 small jalapeño, finely diced, seeds removed

Sauces and Seasonings

  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil, divided
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chipotle powder
  • 1 teaspoon kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper

Garnish

  • 1/4 cup fresh cilantro, chopped
  • to taste lime wedges, for serving

Instructions

Cooking the Steak

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sirloin steak and season with 1/2 teaspoon of kosher salt and black pepper. Cook until browned, about 5 minutes, then remove and set aside.

Cooking the Vegetables

  • In the same skillet, add the remaining tablespoon of olive oil. Add the onions, jalapeño, and garlic, cooking until softened, about 3 minutes.
  • Stir in the potatoes, zucchini, and bell peppers. Cook for another 7-8 minutes until veggies are tender.

Combining Ingredients

  • Return the steak to the skillet, adding Worcestershire sauce, tomato paste, smoked paprika, chipotle powder, and the remaining 1/2 teaspoon of kosher salt. Stir well to combine and cook for another minute.
  • Remove from heat and stir in chopped cilantro. Serve hot with lime wedges on the side.

Notes

Enhance flavor by marinating the steak in Worcestershire sauce for 30 minutes before cooking. Customize with seasonal veggies such as asparagus or carrots. Offer sour cream or avocado slices on the side for a creamy contrast.
