  • 9 oz coleslaw mix
  • 15 oz pineapple (drained and cut into 1/2-inch tidbits)
  • 1/2 cup onion (finely diced into 1/4-inch pieces)

Dressing Ingredients

  • 1 tbsp toasted sesame seeds For garnish.
  • 1/2 cup mayonnaise
  • 1/3 cup cider vinegar
  • 1 tbsp fresh lime juice
  • 2 tbsp brown sugar (packed)
  • 1 tsp coriander
  • 3/4 tsp salt
  • 1/2 tsp pepper

Instructions
 

Preparation

  • In a large bowl, combine the coleslaw mix, diced pineapple, and onion.
  • In a separate bowl, whisk together the mayonnaise, cider vinegar, lime juice, brown sugar, coriander, salt, and pepper until smooth.
  • Pour the dressing over the coleslaw mixture and toss gently to coat all the ingredients evenly.
  • Sprinkle toasted sesame seeds on top for an added crunch.
  • Refrigerate for at least 15 minutes to let the flavors meld before serving.

Notes

Enhance flavor with a sprinkle of chopped cilantro or mint. Customize with diced bell peppers or jalapeƱos for a kick. Serve on tacos or alongside grilled chicken for a unique twist.
