  • 12 oz pasta (penne or rotini) Cook according to package instructions.
  • 1 lb ground beef or turkey Brown until fully cooked.
  • 1 can (10 oz) Rotel diced tomatoes and green chilies (undrained) Adds freshness and zest.
  • 1 cup heavy cream Creates a luscious sauce.
  • 1 cup shredded cheddar cheese Melt over the pasta.
  • 1 tsp taco seasoning Adds Tex-Mex flavor.
  • 1/2 tsp garlic powder Enhances flavor.
  • salt and pepper to taste
  • fresh cilantro or parsley (optional) For garnish.

Preparation

  • Heat a large skillet over medium heat and add the ground beef or turkey. Cook for about 7-10 minutes, breaking it up until it's browned and no longer pink.
  • Sprinkle in the taco seasoning and garlic powder. Stir well and cook for another minute to toast the spices.
  • Pour in the can of Rotel diced tomatoes along with their juices. Stir together and let simmer for 2-3 minutes.
  • Lower the heat to medium-low, then add the heavy cream and mix well. Simmer for about 3-4 minutes.
  • Toss in the cooked pasta and mix thoroughly to coat it in the sauce. Cook for an additional 2-3 minutes.
  • Sprinkle shredded cheddar cheese over the pasta and cover the skillet for about 2 minutes until melted.
  • Transfer to a serving dish, sprinkle with fresh cilantro or parsley, and enjoy.

Notes

Add a squeeze of fresh lime juice for extra zest; customize with favorite vegetables like bell peppers or zucchini. Can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
