Wet Ingredients

  • 1/2 cup unsalted butter (melted and slightly cooled)
  • 1/4 cup pure honey (clover or wildflower)
  • 1/2 cup dark brown sugar (packed tightly)
  • 1/2 cup granulated sugar (standard white sugar)
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract (pure vanilla preferred)

Dry Ingredients

  • 1 3/4 cups all-purpose flour (spooned and leveled) (210g)
  • 1/2 tsp baking soda (ensures proper spread and rise)
  • 1/2 tsp kosher salt (for the dough)

For Garnish

  • 1 tbsp flaky sea salt (large crystalline flakes for garnish)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  • In a mixing bowl, combine the melted butter, honey, dark brown sugar, and granulated sugar. Stir until well mixed.
  • Add the egg and vanilla extract, mixing until fully incorporated.
  • In a separate bowl, whisk together the flour, baking soda, and kosher salt.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Scoop tablespoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
  • Sprinkle flaky sea salt on top of each cookie.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers appear set.
  • Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Keep cookies in an airtight container at room temperature for 3-5 days. For best results, freeze baked cookies in a single layer, then place in a freezer-safe container. They will last for up to 3 months. Try adding a sprinkle of cinnamon for a warm spice twist. Feel free to mix in chocolate chips or nuts.
