Starch

  • 4 medium Red Potatoes Or riced cauliflower for low-carb.

Aromatics & Vegetables

  • 1 medium Onion Diced and caramelized.
  • 2 cups Lettuce Any mix of leafy greens.
  • 1 cup Pickles Or cucumbers.

Liquids/Dairy

  • 1 cup Shredded Cheese Colby Jack or pepper jack.
  • 1/2 cup Mayo Or Greek yogurt.
  • 1/4 cup Ketchup Low-sugar.
  • 1 tbsp Mustard Dijon for a twist.

Seasoning/Spice Blend

  • 1 tbsp Cajun Seasoning Adjust to taste.

Instructions

Preparation

  • Start by boiling your diced red potatoes in salted water for about 15 minutes until fork-tender.
  • While the potatoes boil, heat a drizzle of olive oil in a large skillet over medium heat. Add the diced onion and cook for 8-10 minutes until golden brown.

Cooking

  • Increase the skillet heat to high and add the ground beef. Shape into patties and smash them down with a spatula for a crispy texture.
  • Cook for 4-5 minutes on one side until a crust forms, then sprinkle Cajun seasoning before flipping.
  • Cook on the other side for another 3-4 minutes until cooked through.
  • Remove the beef and add the boiled potatoes into the same pan. Smash them down until flattened and season lightly with salt.
  • Fry the smashed potatoes for a couple of minutes until crispy.
  • Place the cooked burger patties back on top of the crispy smashed potatoes and sprinkle shredded cheese on top. Cover for 2-3 minutes to melt the cheese.

Serving

  • In serving bowls, layer lettuce, followed by the loaded potato and burger mix. Drizzle with mayo, ketchup, mustard, and top with pickles.
