Ingredients
  

For the Shrimp

  • 1 pound Shrimp Peeled and deveined
  • 2 tablespoons Olive oil For cooking
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

For the Salsa

  • 1 cup Mango Diced
  • 1 medium Avocado Diced
  • 1/2 cup Red onion Diced
  • 1/4 cup Cilantro Chopped
  • 2 tablespoons Lime juice Freshly squeezed
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Optional Base

  • 2 cups Cooked rice or quinoa Optional

Instructions
 

Cooking the Shrimp

  • Heat a pan with olive oil over medium heat.
  • Add shrimp to the pan with salt and pepper, cooking until pink and opaque (about 5-7 minutes).

Preparing the Salsa

  • While shrimp is cooking, dice the mango, avocado, and red onion.
  • In a bowl, combine mango, avocado, red onion, cilantro, lime juice, salt, and pepper. Mix gently.

Assembling the Bowl

  • Once shrimp is done, remove from heat and let cool slightly.
  • Assemble the bowl with the cooked shrimp and top with the mango salsa.
  • Serve over a base of rice or quinoa if desired.

Notes

Add a sprinkle of chili flakes for a touch of heat. Customize the salsa with diced jalapeƱo or bell peppers for extra crunch. Serve with a wedge of lime for an extra burst of flavor.
