  • 4 pieces boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 piece lemon (juiced and zested)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon Fresh parsley (for garnish)

Preparation

  • Place the chicken breasts in the slow cooker.
  • In a bowl, mix chicken broth, lemon juice, lemon zest, olive oil, minced garlic, thyme, oregano, salt, and pepper.
  • Pour the mixture over the chicken in the slow cooker.
  • Add the rice to the slow cooker, making sure it is evenly distributed.

Cooking

  • Cover and cook on low for 6 hours or until the chicken is cooked through.
  • Once done, fluff the rice and chicken with a fork, and garnish with fresh parsley.

Notes

Add a splash of extra lemon juice for a more vibrant flavor. Customize by mixing in your favorite vegetables, such as peas or bell peppers. Serve it with a side of crusty bread to soak up the delicious sauce.
