  • 1 Large Egg Beaten. Can substitute with ground flaxseed mixed with water for a vegan option.

Dry Ingredients

  • 1 cup All-Purpose Flour Fresh flour recommended. Can substitute with almond flour for a gluten-free option.
  • 1 teaspoon Baking Powder Ensure it's not expired for effective results.
  • 1 teaspoon Salt For enhanced flavor; sea salt can be used as a cleaner alternative.

Greens

  • 2 cups Baby Spinach Finely chopped; can substitute with kale.

Cheese

  • 1 cup Shredded Mozzarella Cheese Use fresh mozzarella for better melting quality. Feta cheese can add a tangy twist.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the cottage cheese, olive oil, and beaten egg. Stir until well mixed.
  • Sift in the all-purpose flour, baking powder, and salt. Fold gently until just combined.
  • Fold in the chopped spinach and shredded mozzarella until evenly distributed.
  • Scoop portions of the dough and shape them into rounds with a hole in the middle.
  • Place the flagels on a baking sheet lined with parchment paper and bake for 20 minutes, or until golden brown.
  • Remove from the oven and let them cool slightly before serving.

Notes
