Ingredients
  

Pudding Base

  • 1 cup almond milk
  • 1/2 cup chia seeds
  • 1/4 cup Greek yogurt
  • 2 tablespoons maple syrup or honey Choose one
  • 1 teaspoon vanilla extract

Layering Ingredients

  • 1 cup fresh strawberries, diced
  • 1/4 cup cream cheese, softened
  • Graham cracker crumbs For topping

Preparation

  • In a mixing bowl, combine the almond milk, chia seeds, Greek yogurt, maple syrup (or honey), and vanilla extract. Stir well until there are no lumps.
  • Cover the mixture and refrigerate for at least 4 hours, or until the chia seeds have absorbed the liquid and formed a pudding-like texture.
  • In a separate bowl, blend the softened cream cheese until creamy and smooth.

Layering

  • Once the chia pudding is ready, layer it in serving cups starting with a layer of the pudding, followed by a layer of diced strawberries, and then a layer of cream cheese mixture.
  • Repeat the layers until the cups are full, finishing with a layer of strawberries on top.
  • Top with graham cracker crumbs for a crunchy finish. Enjoy!

Notes

Add a splash of lemon juice to the cream cheese for a tangy kick. Mix in other fruits like blueberries or bananas for a fun twist. Serve with mint leaves on top for a fresh touch.
