  • 1 cup fresh strawberries (or frozen) Wash and hull before chopping.
  • 1 cup unsweetened almond milk (or any milk you prefer)
  • 3 tablespoons chia seeds
  • 1 to 2 teaspoons honey or maple syrup Optional for sweetness.
  • 1/2 teaspoon vanilla extract
  • a pinch salt

Preparation

  • Wash and hull the strawberries. Chop them into small pieces.
  • In a medium bowl, combine the chopped strawberries, almond milk, chia seeds, honey (or maple syrup), vanilla extract, and a pinch of salt.
  • Stir well to ensure the chia seeds are evenly distributed.
  • Cover the bowl and place it in the fridge for at least 2 hours, or overnight for best results. The chia seeds will swell and create a pudding-like texture.
  • Once set, give it a good stir and serve in bowls or jars.

Notes

For added flavor, consider mixing in different fruits like blueberries or bananas. Serve with nuts, coconut flakes, or granola for extra crunch.
