Ingredients
  

For the crust

  • 1.5 cups Graham cracker crumbs Crush finely for a smooth texture.
  • 6 tablespoons melted butter Avoid cooling too much before mixing.
  • 1 tablespoon sugar
  • 1/4 teaspoon salt

For the filling

  • 16 ounces cream cheese Must be at room temperature.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 cup heavy cream Whipped to stiff peaks.
  • 2 cups fresh strawberries Chopped for sweetness and color.
  • 2 tablespoons sugar For the strawberry mixture.
  • 1 tablespoon lemon juice For the strawberry mixture.
  • 1 tablespoon cornstarch To thicken the strawberry mixture.
  • 2 tablespoons water For the cornstarch slurry.

Optional ingredients

  • 1 teaspoon almond extract Enhances the flavor.
  • 1/2 cup white chocolate chips For additional flavor.
  • 1/2 cup freeze-dried strawberries For garnish or mix-in.
  • 1 cup Golden Oreos or vanilla cookies Alternative for the crust.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine crushed Graham cracker crumbs, melted butter, sugar, and salt. Mix well.
  • Press the mixture into the bottom of a springform pan, creating an even layer.
  • Bake for about 10 minutes until lightly golden.

Filling

  • Using an electric mixer, beat the softened cream cheese until smooth and creamy.
  • Gradually add powdered sugar, vanilla extract, and lemon juice. Beat until well combined.
  • Fold in the whipped cream carefully.

Strawberry preparation

  • Combine chopped strawberries with sugar and lemon juice. Let sit for 10 minutes.
  • Mix cornstarch with water and cook with the strawberry mixture over medium heat until thickened.
  • Remove from heat and let cool slightly.

Assembly

  • Pour half of the cheesecake filling over the baked crust.
  • Add cooled strawberry mixture on top, followed by remaining cheesecake filling.
  • Smooth the top and refrigerate for at least 3 hours, or until set.

Notes

Serve chilled, decorated with fresh strawberries on top. Perfect for any gathering or special occasion.
