Ingredients
  

Main Protein

  • 2 pieces chicken breasts Grilled until fully cooked. Ensure internal temperature reaches 165°F.

Starch/Pasta

  • 2 cups cooked rice Use white, brown, or cilantro-lime rice.

Seasoning/Spice Blend

  • 1 teaspoon chili powder Combine with other spices.
  • 1/2 teaspoon smoked paprika Combine with other spices.
  • 1/2 teaspoon cumin Combine with other spices.
  • 1/4 teaspoon salt Combine with other spices.
  • 1/4 teaspoon black pepper Combine with other spices.

Liquids/Dairy

  • 1/2 cup sour cream or Greek yogurt Mixed with juice of 1 lime.

Aromatics & Vegetables

  • 1 cup corn kernels Fresh, frozen, or canned.
  • 1/2 cup black beans Drained and rinsed.

Optional Finishing Ingredients

  • 1/4 cup crumbled cotija cheese For added flavor.
  • 2 tablespoons chopped cilantro For freshness.

Instructions
 

Grill the Chicken

  • Preheat your grill or skillet over medium-high heat.
  • Season chicken breasts with chili powder, cumin, salt, and pepper.
  • Grill for about 6-7 minutes on each side until cooked through and golden brown. Allow to rest before slicing.

Prepare the Corn and Beans

  • In the same pan, add olive oil and corn over medium heat.
  • Sauté for 3-5 minutes until slightly charred.
  • Add black beans just to heat through, about 2 minutes, then set aside.

Mix the Rice & Dressing

  • In a large bowl, combine the cooked rice with lime juice, garlic powder, and a bit of salt.
  • Stir well to distribute the flavors.

Assemble the Bowls

  • Divide the seasoned rice among bowls, then top with sliced chicken, corn-bean mixture, diced red onion, and tomatoes.

Add Finishing Touches

  • Sprinkle crumbled cotija cheese and fresh cilantro over each bowl.
  • Add a dollop of sour cream or Greek yogurt on the side.

Serve!

  • Present your bowls with lime wedges on the side for guests to add to their liking.
