Ingredients

  • 2 cups grilled or roasted chicken, diced Can substitute with rotisserie or canned chicken.

Starch/Pasta

  • 1 cup sweet corn, grilled or canned Use frozen corn if needed.

Aromatics & Vegetables

  • 1 large cucumber, diced Use green onions for milder flavor.
  • ½ cup red onion, finely chopped Too much onion may overpower the salad.

Liquids/Dairy

  • ½ cup mayonnaise Low-fat options available.
  • 2 tablespoons Greek yogurt Can use low-fat yogurt.

Seasoning/Spice Blend

  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper

Optional Finishing Ingredients

  • to taste crumbled feta cheese Can substitute with goat cheese.

Instructions
 

Preparation

  • Grill or roast the chicken until fully cooked and dice into bite-sized pieces.
  • If using fresh corn, grill it for about 10 minutes; if canned, drain and rinse.
  • Dice the cucumber and finely chop the onion.
  • In a bowl, mix mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper until smooth.

Combining Ingredients

  • In a large mixing bowl, combine the diced chicken, sweet corn, chopped cucumber, and onion.
  • Pour the dressing over and mix well.
  • Taste and adjust seasoning if needed.

Serving

  • Serve chilled, garnished with crumbled feta if desired.

Notes

For extra flavor, consider adding lime zest. Customize with avocado or cherry tomatoes. Pairs well with grilled meats.
