Ingredients
  

Main Protein

  • 4 pieces boneless, skinless chicken breasts Ensure to clean and pat dry before slicing a pocket into each breast.

Liquids/Dairy

  • 8 oz cream cheese Soften before mixing with other cheeses.
  • 1 cup mozzarella cheese Shredded or cubed, depending on preference.
  • 1/2 cup Parmesan cheese Freshly grated is best for flavor.

Aromatics & Vegetables

  • 2 cups fresh spinach Chopped; can substitute with kale.
  • 3 cloves garlic Minced; avoid overcooking to prevent bitterness.

Seasoning/Spice Blend

  • 1 tbsp Italian seasoning Adjust according to taste.
  • to taste salt and pepper For flavor enhancement.

Optional Finishing Ingredients

  • 2 tbsp olive oil For searing the chicken.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a bowl, combine chopped spinach, softened cream cheese, mozzarella, Parmesan, minced garlic, Italian seasoning, salt, and pepper. Mix until well blended.
  • Carefully slice a pocket into each chicken breast and generously fill each with the spinach and cheese mixture.
  • Secure the openings of the chicken with toothpicks.

Cooking

  • Heat olive oil in a large oven-safe skillet over medium-high heat. Add the stuffed chicken and sear for about 3-4 minutes on each side until golden brown.
  • Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (165°F or 74°C).
  • Once done, remove from the oven and let the chicken rest for 5 minutes before serving.

Notes

Store leftovers in an airtight container for up to 3 days or freeze uncooked for up to 3 months.
