Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • While it heats, place the chicken breasts on a cutting board and carefully butterfly them by slicing them horizontally, but don’t cut all the way through.

Mix the Stuffing

  • In a mixing bowl, combine the cream cheese, mozzarella, Parmesan, spinach, minced garlic, Italian seasoning, salt, and pepper. Stir well until it’s smooth and creamy.

Stuff the Chicken

  • Take a generous portion of the stuffing mixture and fill each chicken breast. Fold the chicken over to enclose the filling, securing with toothpicks if necessary.

Sear the Chicken

  • In a large oven-safe skillet, heat olive oil over medium heat. Add the stuffed chicken, cooking for 4-5 minutes on each side until golden brown.

Bake the Chicken

  • Transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and cheese is bubbling.

Finish and Rest

  • Remove the skillet from the oven and let the chicken rest for about 5 minutes.

Serve and Enjoy

  • Slice the chicken and plate it beautifully with fresh herbs or a sprinkle of Parmesan on top.

Notes

For added flavor, consider a squeeze of lemon juice in the filling. Customize with your favorite vegetables.
