Ingredients
  

Main Protein

  • 1 lb chicken breast Cut into bite-sized pieces for even cooking.

Starch

  • 1 cup white rice Rinse before cooking to remove excess starch.

Aromatics & Vegetables

  • 2 cups broccoli florets Cut into small florets for even cooking.

Liquids/Dairy

  • 1 cup coconut milk Use canned for convenience.
  • 2 tbsp lime juice Fresh lime juice adds the best flavor.

Sauce/Seasoning

  • 1/2 cup sweet chili sauce Enhances the sweetness and flavor.
  • to taste salt Enhances natural flavors.
  • to taste pepper Adjust according to preference.

Preparation

  • Wash and chop the broccoli, dice the chicken, and measure out the rice.

Cooking

  • In a medium pot, cook the rice according to package instructions, usually about 15 minutes.
  • While the rice cooks, heat a tablespoon of oil in a large skillet over medium-high heat.
  • Add the diced chicken, cooking for about 5-7 minutes until browned and no longer pink.
  • Toss in the broccoli and sauté for 3-4 minutes until bright green and slightly tender.
  • Pour in the coconut milk and sweet chili sauce. Stir and let it simmer for about 5 minutes.
  • Season with salt, pepper, and lime juice. Stir well and cook for another minute.
  • Serve the chicken and broccoli mixture over the cooked rice. Garnish with extra lime wedges if desired.
