  • 2 cups sweet corn kernels (fresh or frozen) If using fresh corn, cook it in boiling water for about 3-5 minutes before using.
  • 1 whole bell pepper (any color), diced
  • 1/2 whole red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice

Preparation

  • If using fresh corn, cook it in boiling water for about 3-5 minutes. If using frozen corn, thaw it.
  • In a large mixing bowl, combine the sweet corn kernels, diced bell pepper, diced red onion, and chopped cilantro.
  • In a small bowl, mix the mayonnaise, lime juice, salt, and pepper.
  • Pour the dressing over the corn mixture and toss until everything is nicely coated.
  • Taste and adjust seasoning as needed, then chill in the refrigerator for about 30 minutes before serving.

Notes

Enhance the flavor by adding a sprinkle of chili powder or cumin. Customize with black beans, avocado, or diced jalapeƱos for an extra kick. Serve it alongside tortilla chips for a crunchy update.
