Ingredients

Main Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 pound beef sausage, casings removed
  • 1 cup bell peppers, diced (any color)
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheese (cheddar works well)
  • 1/2 cup chicken broth

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the sausage over medium heat until browned. Remove from the skillet and set aside.
  • In the same skillet, add the chopped onion and garlic. Cook until the onion is translucent, about 3-4 minutes.
  • Add the diced sweet potatoes and bell peppers to the skillet. Stir in the thyme, paprika, salt, and pepper. Cook for about 10 minutes until they begin to soften.
  • Return the sausage to the skillet and pour in the chicken broth. Mix well.
  • Transfer the mixture to a greased casserole dish and sprinkle cheese on top.
  • Bake in the preheated oven for 30 minutes or until the sweet potatoes are tender and the cheese is bubbly and golden.

Notes

For extra flavor, consider adding your favorite spices or herbs. You can also customize with other vegetables based on your preference. Serve with a dollop of sour cream or Greek yogurt for a creamy touch.
