  • 2 lbs potatoes Fresh, peeled and diced
  • 1 cup mayonnaise
  • 2 tablespoons mustard
  • 1/4 cup apple cider vinegar
  • 1 small onion, diced
  • 2 hard-boiled eggs chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • Begin by washing and peeling the potatoes.
  • Cut the potatoes into bite-sized pieces and place them in a large pot.
  • Cover the potatoes with water and bring to a boil. Cook for about 15 minutes until tender.
  • Once cooked, drain the potatoes and let them cool slightly.
  • In a large bowl, combine mayonnaise, mustard, apple cider vinegar, diced onion, and chopped eggs.
  • Mix well and add in the cooled potatoes. Stir gently to coat.
  • Season with salt and pepper to taste.
  • Garnish with fresh parsley before serving.

Notes

Add a dash of garlic powder for an extra zing of flavor. Customize it with crispy bacon bits or diced pickles for added crunch. Serve it chilled for a refreshing side dish during warm weather.
