  • 1 cup Monterey Jack cheese, shredded

Seasoning and Oil

  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper

Preparation

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat.
  • Add sliced onions and mushrooms to the skillet. Sauté until softened, about 5-7 minutes.
  • Stir in minced garlic, paprika, thyme, salt, and pepper, and cook for another 2 minutes.
  • While the vegetables cook, season the chicken breasts with salt and pepper.

Cooking

  • In an oven-safe skillet or baking dish, arrange the chicken breasts and cover with the prepared mushroom and onion mixture.
  • Sprinkle shredded Monterey Jack cheese generously over the top.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is no longer pink and the cheese is bubbly and golden.
