Ingredients
  

Main Protein

  • 4 pieces boneless, skinless chicken breasts or thighs Cut into bite-sized pieces, trimmed of excess fat.

Starch/Pasta

  • 2 cups jasmine or brown rice Cook according to package instructions.

Seasoning/Spice Blend

  • 1/4 cup creamy peanut butter Stir well before measuring.

Liquids/Dairy

  • 1/4 cup soy sauce Use low-sodium if preferred.

Aromatics & Vegetables

  • 2 cloves garlic Minced finely.
  • 1 tablespoon fresh ginger Minced finely.

Optional Finishing Ingredients

  • Chopped peanuts For garnish.
  • Cilantro Chopped for garnish.

Instructions
 

Preparation

  • Heat 2 tablespoons of vegetable oil in a large skillet over medium heat.
  • Add the cut chicken and cook for about 5-7 minutes until browned and cooked through.
  • While the chicken cooks, mix peanut butter, soy sauce, rice vinegar, honey, and coconut milk in a bowl.
  • Once the chicken is cooked, add minced garlic and ginger to the skillet and cook for about 1 minute.
  • Pour the sauce mixture over the chicken and stir well to coat.
  • Let it simmer on low for another 5 minutes.
  • Add Sriracha to taste if a spicy kick is desired.
  • Remove from heat and garnish with chopped peanuts and cilantro.

Notes

Serve with jasmine rice or noodles. Leftovers can be used in wraps or salads.
