  • 4 large egg yolks

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter until sandy.
  • Press the mixture into the bottom and sides of a pie dish and bake for about 10 minutes.

Prepare the Filling

  • In a bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth.

Fill and Bake

  • Once the crust is done, allow it to cool slightly, then pour in the key lime filling.
  • Return the pie to the oven for 15 minutes, until filling is set but slightly jiggly.

Cool and Whip

  • Let the pie cool to room temperature, then refrigerate for at least 2 hours.
  • In a chilled bowl, beat the heavy cream with powdered sugar until soft peaks form.

Assemble and Serve
