  • 1 cup plain Greek yogurt
  • 1 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh dill, chopped
  • 1-2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: olives, feta cheese, or avocado

Preparation

  • In a large bowl, combine the shredded chicken and Greek yogurt.
  • Add in the diced cucumber, halved cherry tomatoes, and chopped red onion.
  • Stir in the fresh dill, minced garlic, and lemon juice.
  • Season with salt and pepper to taste. Mix well until everything is combined.
  • If desired, fold in olives, feta cheese, or avocado for extra flavor.
  • Chill in the refrigerator for at least 10 minutes before serving.

Notes

Enhance flavor by adding a splash of red wine vinegar. Customize by adding roasted peppers or a variety of herbs.
