Ingredients
  

Main Protein

  • 2 cups cooked, shredded chicken breast Use rotisserie chicken for convenience or poach at home.

Aromatics & Vegetables

  • 1/4 cup finely chopped celery Adds crunch and flavor.
  • 1/4 cup finely chopped red onion Use green onions for a milder flavor if desired.

Liquids/Dairy

  • 2 ripe avocados, mashed Base for the salad; add Greek yogurt for extra tang if desired.

Seasoning/Spice Blend

  • 2 tablespoons fresh lime juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • salt and black pepper to taste Adjust to match your taste preference.

Optional Finishing Ingredients

  • 2 tablespoons chopped fresh cilantro Optional for added flavor.
  • 1/4 cup chopped pecans Alternatively, use walnuts or sunflower seeds.

Preparation

  • Cut the ripe avocados in half, remove the pits, and scoop the flesh into a mixing bowl. Mash them until creamy but still chunky.
  • Add the 2 cups of shredded chicken into the bowl with the mashed avocados. Mix gently to combine.
  • Sprinkle in the finely chopped celery and red onion and fold them into the mixture.
  • Pour in the fresh lime juice, Dijon mustard, garlic powder, salt, and black pepper. Stir everything thoroughly.
  • If using, fold in the cilantro and pecans last.
  • Taste the salad and adjust seasonings as needed.

Notes

Serve the salad in a bowl or in lettuce leaves. Pairs well with whole grain crackers or tortilla chips. Best enjoyed chilled.
