Ingredients
  

Vegetables and Aromatics

  • 1 piece Onion Finely chopped for depth.
  • 3 cloves Garlic Mince for robust flavor.
  • 1 large Potato Peeled and chopped into small cubes.
  • 300 grams Peas (fresh or frozen) Fresh peas should be shelled.

Broth and Seasoning

  • 3 cups Vegetable broth Enhances all flavors.
  • 1 tbsp Vegetable oil For sautéing.
  • to taste Salt and pepper Season to preference.

Herbs and Garnish

  • 1 tbsp Lemon juice For a fresh finish.
  • to taste Fresh herbs (like parsley or lovage) Chopped just before serving.

Instructions
 

Cooking Steps

  • Start by heating 1 tablespoon of vegetable oil in a large pot over medium heat. Add the diced onion and cook for about 5 minutes until soft and translucent.
  • Once the onions are ready, add the minced garlic, cooking for another minute until fragrant.
  • Add the chopped potato to the pot and stir well. Let it cook for about 2 minutes, then pour in the vegetable broth.
  • Raise the heat and bring the soup to a gentle boil. Cook for about 10 minutes, or until the potatoes are fork-tender.
  • Stir in the peas and cook for another 5 minutes.
  • Remove the pot from heat and puree the soup until smooth using an immersion blender.
  • Once blended, add salt, pepper, and the juice of 1 tablespoon of lemon. Stir in your favorite fresh herbs.

Notes

Consider adding a splash of coconut milk for extra creaminess. Pair with crusty bread or a light salad.
