Ingredients
  

For the Dough

  • 3 cups bread flour Plus an additional 1/4 cup for kneading.
  • 3/4 cup water Warm water to aid in yeast activation.
  • 1/3 cup granulated sugar For sweetness.
  • 2 teaspoons instant yeast Fast-acting yeast.
  • 1 teaspoon fine sea salt
  • 1/3 cup heavy cream
  • 1/3 cup whole milk
  • 1 large egg
  • 1 tablespoon vanilla bean paste For flavor.
  • 6 tablespoons unsalted butter Softened for dough.

For the Filling

  • 8 tablespoons unsalted butter For filling.
  • 2/3 cup light brown sugar Adds caramel flavor.
  • 1/2 cup mashed banana Ripe bananas work best.
  • 2 cups mini Nilla wafers Crushed for added texture.

For the Vanilla Pudding

  • 1 tablespoon vanilla bean paste
  • 1/2 teaspoon gelatin Helps set the pudding.
  • 1 tablespoon cold water
  • 1 1/2 tablespoons cornstarch
  • 1/4 cup granulated sugar
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 2 large egg yolks
  • 2 tablespoons cold unsalted butter
  • 2 teaspoons vanilla bean paste or extract
  • extra Nilla wafers For garnish.

Instructions
 

Preparation

  • In a bowl, mix 3 cups of bread flour, 1/4 cup of bread flour, granulated sugar, yeast, and salt.
  • Slowly add water while mixing to form a dough. Knead until smooth.
  • Let the dough rise in a warm place for about 1 hour.
  • Roll out the dough and spread softened butter evenly on top.
  • Combine light brown sugar, mashed banana, and crushed Nilla wafers; sprinkle over the buttered dough.
  • Roll the dough tightly and cut into slices.
  • Place rolls in a greased baking dish and let them rise again for about 30 minutes.

Baking

  • Preheat the oven to 350°F (175°C) and bake for 25 minutes until golden brown.

Pudding Preparation

  • For the pudding, whisk together cornstarch, sugar, and milk in a saucepan over medium heat.
  • Add in heavy cream, egg yolks, and vanilla; stir until thickened.
  • Cool the pudding slightly, then pour over warm cinnamon rolls.
  • Garnish with extra Nilla wafers and serve warm!

Notes

Add spices like nutmeg or cardamom to enhance flavor. Customize by mixing in chocolate chips or nuts for added texture. Serve with a scoop of vanilla ice cream for a delightful dessert.
